
Viral Healthy Samoas

Happy Thursday!! I hope everyone is having a good week so far!! I wanted to share a recipe that I find SO good and satisfies my sweet tooth! ![]()

I tried making the viral, healthy Samoas (with a slight change), and they were DELICIOUS!
These sweet treats are made with only three ingredients: Medjool dates, unsweetened shredded coconut (toasted), and chocolate.
You can even leave out the chocolate (which is what I prefer), and they are still so good! You can even mix in nuts or nut butter to the mixture!
1. Start off by soaking 100g of dates in boiling hot water for at least 20 minutes or until they are soft
2. In the meantime, spread your coconut on a pan and toast in the oven! There is no specific time, just until golden brown!
3. Once the dates are soft and the coconut is shredded, put them in a blender or food processor and mix them until combined.
4. Next you want to make small balls, press them flat and poke holes through the middle to resemble the “Samoa” shape. I used a chopstick, but you can use anything that works!
5. Pop them in the freezer for at least 2 hours or even overnight.
6. Once they are frozen, melt your chocolate (I added a tiny amount of coconut oil to make it thinner).
7. Dip the bottoms in chocolate and drizzle a bit on top!
Save these and make them this week to satisfy your sweet tooth!
